Boxed Cake Mix Cookies
Although I am not typically a boxed cake mix kind of gal (I prefer my baked goods made from scratch), I had a box of chocolate cake mix in my cupboard. I wanted to try something different than just making cupcakes or a cake. I spotted a cookie recipe that used a box caked mix, so I gave it a shot! It is a really straightforward recipe.
- 1 boxed cake mix
- 1/2 cup oil
- 2 eggs
- any extra goodies you want to add (I chose walnuts and chocolate chips)
Preheat your oven to 350*F and spray or line your cookie sheets.
Mix everything together with a hand mixer. I thought I would be able to do this by hand. You can’t! The consistency of this dough/batter is really neither cookie dough nor cake batter. I actually thought to myself while making this, “Well, there is no way these cookies are going to turn out well.” The batter actually wrapped around the hand mixer, I have never seen that happen. Very weird.
But, by some miracle, they do. I promise!
Once it all comes together, you can either stick it in the fridge for 10-15 minutes to make it easier to handle, or use a cookie scoop to drop cookie balls onto your cookie sheets. I flattened my cookies out a bit because I topped them with a walnut and a few extra chocolate chips.
Bake for about 12-14 minutes (13 did the trick for us) at 350° F. Let them cool on the tray for about two minutes then transfer to a wire cooling rack.
These are best the first day or if you heat them up a bit and serve with some vanilla ice cream a day or two later!
