Easy Cream Cheese Pumpkin Cookies

I just love all the pumpkin flavored goodies that become available in the fall. Nothing gets me in the mood for hay rides and pumpkin carving like a delicious pumpkin recipe. I was especially happy to find one that’s so simple that my two year old could assist in me in making it. This one is as delicious as it is easy.

This is where I originally found the recipe. I skipped over combining ingredients in separate stages to make it simpler and the cookies did not suffer.

Ingredients:

  • Perfectly Pumpkin Cake Mix (found at Target seasonally)
  • 1/2 cup softened butter
  • 1/2 tsp vanilla
  • 8 oz softened cream cheese
  • 1 egg
  • powdered sugar

Instructions:

This is why this is a great recipe to do with your little ones: simply open the packages of the cake mix, butter and cream cheese and let them dump it all into a mixing bowl.

Add in the vanilla and egg then mix until well blended.

Put the bowl intp the fridge for about 30 minutes to let the mixture harden a little bit.

When it is hardened, put some powdered sugar in a small bowl.

Roll the dough into small balls. Depending on your children’s ages, this could also be a fun part for them to join in on. Dip each ball in the powdered sugar and then place on a cookie sheet. I always like to line my cookie sheets with non-stick aluminum foil for easy clean up.

Bake at 350 degrees F for 10-12 minutes.

Sprinkle the tops of the cookies with powdered sugar if desired.
