Four Ingredient White Chocolate Popcorn

Every Christmas, my mom and I host a Love, Actually movie party for our family and friends (girls only!) in early December. It’s a tradition we started eight years ago and we look forward to it every year. It’s almost like the kick-off to the holiday season for us.

We treat our loved ones to dinner and while the menu changes every year, we keep one thing the same: White Chocolate Popcorn. Mmmmmmmm. It’s easy, healthy (not!) and a hit with everyone.

Ingredients:

  • 2 regular sized envelopes of popcorn (you can use any brand and any kind of popcorn… butter, low fat, unsalted, fat free, etc)
  • 1 bag of white chocolate chips (about 2 cups)
  • 1/2 of a 10-12 oz. bag of holiday M&M’s
  • 1/2 canister of cashew pieces and halves (we use a 9.5 oz canister from a drugstore)


Directions:

Pop one envelope of popcorn in the microwave. Make sure you don’t overdo it or you’ll end up with burnt pieces and even the chocolate won’t cover up that awful taste!

Spread the popcorn out on a jelly roll pan and let it cool a few minutes. Pick out the un-popped kernels and discard them.

While the popcorn is cooling, pour ½ of the bag of white chocolate chips (about one cup) in a microwave safe bowl. Microwave them at medium heat for one minute. Remove the bowl and stir. Continue microwaving the chips in 30 second increments and stir well after each one until the chocolate is melted.

Pour the chocolate over the popcorn and mix. This can get messy, but I’ve found the best way to do this is to use plastic gloves and toss the popcorn with your hands. The gloves will also protect your hands if the melted chocolate is hot.

Sprinkle generous handfuls of cashew pieces and M&M’s over the popcorn.

Pour the prepared popcorn in a festive holiday bowl.

Repeat steps 1-5 with the second envelope of popcorn.

And that’s it! With only four ingredients and six simple steps, how can you go wrong?

Even though this is really a dessert, people munch on it before dinner and throughout the movie.

I’ve also made this to give out at work or as a holiday gift for our neighbors. It’s very forgiving so you can use as much or as little cashews and M&M’s as you want. You could use different types of nuts if you don’t like cashews and you could use regular colored M&M’s if you were making this any other time of the year besides the holidays.
