Our Favorite Veggie Dip

A while back I was discussing with a fellow mama ways to sneak vegetables into my son’s diet.

This mama happens to be a vegetarian, and she told me about a dip she makes with her son on a regular basis, so I had to give it a try. The fun part is that you can use any of your favorite vegetables or whatever is in season for this super simple dip.

Ingredients:

  • a handful of baby carrots
  • a handful of blanched broccoli pieces
  • a handful of blanched spinach or kale
  • 1 small clove of garlic, peeled
  • 1 pinch of sea salt
  • 1 8oz package of cream cheese

Directions:

    • Add the cream cheese, salt and peeled garlic into a food processor and process until smooth.
    • One at a time, add the veggies. Process until smooth.

  • Enjoy! Store in the fridge for up to a week to a week and a half… if it lasts that long.

This is a recipe that my son loves to make with me. We push a stool up against the counter and he gets to drop each of the vegetables into the food processor. He loves getting to push the ‘pulse’ button and watching everything spin.

When we’re all done, we usually eat the dip with crunchy bread sticks or crackers. We will also spread it on a toasted bagel. I enjoy eating it with carrot and celery sticks, but my son isn’t keen on the crunchy texture of those veggies. I also enjoy dipping kettle cooked potato chips in this dip!

I’m pretty sure he isn’t even getting one whole serving of vegetables when he eats the dip, but it’s better than no veggies at all! Baby steps…
