Quick and Easy Fruit Salad

Looking for a quick and easy recipe for your next potluck or upcoming gathering? This has been a favorite passed down from my own mama, who in turn got it from a friend years ago. It’s always a huge hit! Quick and Easy Fruit Salad Recipe

Ingredients:

  • 2 cans of pineapple (with juice)
  • 2 cans of mandarin oranges (with juice)
  • 1 large box of cook and serve vanilla pudding mix (unprepared)
  • grapes (halved) – about a cup
  • bananas (sliced) (optional, I personally leave these out)

(My mom has also added additional fruits such as fresh strawberries, too— so you can get creative. This is just my usual combination!)

Directions:

  • Drain your pineapple juice into a separate cup; you will need two cups of juice total. If you don’t have enough pineapple juice, add some juice from your mandarin oranges to make up the difference.
  • Mix the two cups of juice with the cook-and-serve vanilla pudding mix in a large microwave-safe bowl. Microwave the juice for about two minutes, stir, and microwave again for another two minutes. Repeat this step until the juice takes on a gooey texture.

  • Add your canned pineapple and mandarin oranges to the juice mixture. Also add the grapes at this time. I typically use one cup, but you can use more or less.
  • If you are adding bananas, wait to add them until you’re ready to serve — they do get mushy and brown if you add them too early on!
  • Refrigerate until ready to serve.
