Spinach Lasagna Rolls

I was on Pinterest (really, what would we do without it?!) looking for new recipes for my picky family to eat for dinner. I saw a friend had pinned a recipe for spinach lasagna roll ups. I was intrigued, because I’m always looking for ways to incorporate healthy choices, without “seeming” healthy. Sometimes, you just have to trick toddlers! The “pin” showed pictures, but when you clicked the link, it didn’t work. I decided it seemed simple enough, and made the attempt on my own. Spinach Lasagna Rolls

Ingredients:

  • 2 cups mozzarella cheese Spinach Lasagna Rolls
  • 15 oz ricotta cheese
  • ½ bag spinach (the bag I bought was 6 oz, I used half and tore the leaves up)
  • 2 eggs (slightly beaten)
  • 15 lasagna noodles (I actually only fit 14 noodles into my baking dish, but it would have fit 15)
  • spaghetti sauce

Directions:

Cook lasagna noodles according to package. Drain.

While your noodles are boiling, start on the filling mixture. You will mix your eggs, mozzarella cheese, ricotta cheese, and spinach together.

Once your lasagna noodles are soft enough to roll, lay them out, smooth on enough of your filling mixture to cover the noodle. Carefully roll. Spinach Lasagna Rolls

Place your rolls into a 9” x 13” baking dish, seam side down. Top with spaghetti sauce.

Bake at 375 degrees Fahrenheit for 25 minutes.

I make my own sauce. When my husband found out there wouldn’t be any meat in the rolls, he said actually prefers meat sauce. For my sauce, I mix one 29 oz can of tomato sauce, one 6 oz can of tomato paste, one pound of hamburger meat, and seasoned with salt, pepper, garlic powder, Italian seasoning, and crushed red pepper. This could also make a great vegetarian dinner, by using meatless sauce!

Notes
