Caramel Pecan Pie

If you like pecan pie you’ll really love this spin on the traditional recipe. The use of caramel in the base gives it an incredible taste and texture unlike any other pecan pie you’ve tried before.

  • 36 caramel squares
  • 1/4 cup half and half
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 3 eggs
  • 1 cup chopped pecans
  • 1 uncooked pie crust

Preheat the oven to 350 degrees.

In a saucepan combine the caramels, butter, and milk. Cook on low heat, stirring regularly, until completely smooth. Then set aside.

In a large bowl combine the sugar, eggs, vanilla, and salt. Stir together. Then gradually stir in the caramel mixture until smooth. Now, pour in the pecans and finish mixing it all together.

Press a pie crust into the bottom of a pie pan. I prefer the ease of using a pre-made one but feel free to use your favorite pie crust recipe beforehand.

Pour the mixture into the pie crust.

Bake at 350 degrees for 45 minutes.

Allow to cool and set before serving. I find it’s amazing with some whipped topping or a side of ice cream!
