Carrot and Sweet Potato Soup

Summertime is beginning to wind down and although I will miss it dearly, I have no problem welcoming fall with open arms! It is by far my favorite time of the year.

The cooler weather just makes me want to cook, especially lots of yummy meals that I can keep in the fridge and easily warm up.

One of my favorite recipes to make is carrot and sweet potato soup. It is so easy and simply delish!


  • 3 tbsp butter
  • 2 small onions, diced
  • 3-4 carrots, peeled and chopped
  • 1 large sweet potato, peeled and chopped
  • 2 cloves of garlic, minced
  • 5 cups chicken broth (or vegetable)
  • ¼ tsp pepper
  • ¼ tsp salt
  • ¾ tsp thyme
  • ¾ cup milk or cream


  1. In a large pot, melt the butter and cook the onion until tender. Add the carrots, potato, garlic and broth.
  2. Bring everything to a boil and cook until the carrots and potato are very tender; about 25 minutes.
  3. With an immersion blender, mix everything until the vegetables are pureed to your liking (I like to leave mine a bit on the chunky side).
  4. Next, mix in the spices and milk or cream.
  5. Heat through and enjoy!

If you want to cut out a bit of the sweetness, use both sweet potato and white potato. Or you can use only white potato, it’s still just as good!
