Flourless Chocolate Chip Cookies

I was excited when I stumbled across this recipe on Pinterest for flourless chocolate chip cookies. I like cookies in any size, shape or color (I don’t discriminate!) and the fudginess of the cookies caught my eye. Trust me – these did not disappoint! I know some mamas and their kiddos might be avoiding gluten in their diets, and since these are made without flour, these cookies are a must-bake for you. In addition to being gluten free, they’re fudgy, chewy and delicious. And bonus – they’re only six ingredients!

Ingredients:

  • 1 ½ cups powdered sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 1 ½ teaspoon vanilla extract
  • 2 ½ - 3 tablespoons liquid egg whites (or measure the whites of 1-2 eggs)
  • 1/2 cup chocolate chips

To make:

Add powdered sugar, cocoa and salt to a mixing bowl. Stir to combine.

Add vanilla extract and egg whites. This will be easier if you use liquid egg whites, but it can still be done with the actual whites of eggs. They’re just a little harder to measure due to the consistency. Start with 2 ½ tablespoons and add more later if necessary.

Mix to combine. I’ve found that stirring with a spoon by hand works best. The mixture will be very thick, almost like brownie batter. If your batter is too thin, the cookies will flatten out too much while baking. Add a few more drops of egg whites if necessary.

Add chocolate chips and mix well.

Drop onto a parchment paper lined cookie sheet (I use a cookie scoop for this). Every time I’ve made these, I’ve gotten exactly 12 cookies.

Bake at 350 degrees F for 12-13 minutes.

Let them cool on the cookie sheet for at least 5 minutes, as they’ll be very fragile.

Enjoy the fudgy deliciousness that you’ve just created!

Side note: I like to keep these in the freezer and take them out one at a time. I put mine in the microwave for 15 seconds and they’re warm, gooey and awesome. If you’re counting points on Weight Watchers, they are 3 points plus for one cookie. Enjoy mamas!
