Oatmeal Chocolate Chip Cookies

My husband requested that I make a batch of oatmeal chocolate chip cookies for his birthday last month.

I’m not a big fan of oatmeal cookies, but I found a recipe that really takes the cake. These cookies are soft and chewy and didn’t get hard even after sitting out for a while. It’s a great combination of sweet and delectable while still giving health-conscious mamas the satisfaction of eating natural oats.

This is my variation of a Betty Crocker recipe I found online.

Ingredients:

  • 1.5 cups brown sugar
  • 1 cup butter, softened to room temperature
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups oats
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • dash of salt

Directions:

  • Preheat oven to 350 degrees F.
  • Using a hand mixer, beat together brown sugar and butter. Add the vanilla and egg and beat on low until the dough reaches a fluffy consistency.

  • Add the oats, flour, baking soda and salt. Stir with a spoon to combine wet ingredients with dry before using the mixer, then mix on low until combined.
  • You’ll probably have to use your hands to finish mixing the dough at this point in order to get all the oats that have fallen to the bottom of your bowl.

  • Using a spoon or your hands, stir in the chocolate chips.
  • Place a piece of baking paper on a cookie sheet. Drop rounds of dough about one inch apart onto the sheet.

  • Bake for 9-15 minutes. Let cool.

Notes:

  • While I loved the sweetness, my husband thought these cookies were just a tad bit too chocolatey. For more oat-taste than chocolate, try using only 3/4 of a cup of chocolate chips or less.
  • This recipe makes about 48 medium sized cookies. Having only one cookie sheet, I made these in two batches.
  • Optionally, you can also include nuts in these cookies!
