Pumpkin Cookies

Looking for a delicious fall treat?

These pumpkin cookies are always a huge hit at family get-togethers and they are perfect for the holidays!


  • 1/2 cup shortening
  • 1 1/4 cup brown sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups canned or pureed pumpkin
  • 2 1/2 cups flour
  • 2 eggs
  • 1 can vanilla frosting (optional)


Combine all ingredients above and stir until well blended.

Using a spoon (or your hands!), drop cookie-sized batter drops onto a greased cookie sheet about 1-2 inches apart.

Bake at 375 degrees F for 10-15 minutes. You know they are done if you can insert a toothpick and it comes out clean.

Once cool you can frost the cookies to make them extra yummy! Makes about three dozen cookies. Enjoy!
