Pumpkin Cookies

Looking for a delicious fall treat?

These pumpkin cookies are always a huge hit at family get-togethers and they are perfect for the holidays!

Ingredients:

  • 1/2 cup shortening
  • 1 1/4 cup brown sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups canned or pureed pumpkin
  • 2 1/2 cups flour
  • 2 eggs
  • 1 can vanilla frosting (optional)

Directions:

Combine all ingredients above and stir until well blended.

Using a spoon (or your hands!), drop cookie-sized batter drops onto a greased cookie sheet about 1-2 inches apart.

Bake at 375 degrees F for 10-15 minutes. You know they are done if you can insert a toothpick and it comes out clean.

Once cool you can frost the cookies to make them extra yummy! Makes about three dozen cookies. Enjoy!

Guest Mama Lindsay is married to the love of her life, TJ, and they have a beautiful daughter named Danica (03/11). She grew up in San Antonio, Texas and was a competitive swimmer for 14 years. She was even one of the top swimmers in Texas for a few of those years. Shoulder problems forced her to quit in high school, but she still loves to swim laps when she can find the time. Her family loves spending time together outdoors. They enjoy going to the lake, playing on their ATV, and going camping.
