Quick & Easy Ramen Cabbage Salad

This salad is one that I love to serve with any entreé made with Asian-inspired ingredients. It goes wonderfully with my Pineapple Soy Pulled Pork or my Korean Beef Sliders. It tastes yummy with any kind of barbecue too. When we need a super quick dinner, I’ll make this salad and my husband picks up fried chicken while on his way home from work.

I have seen variations of it on more than a few Hawaiian restaurant menus, and it’s a favorite in my family.

Ingredients:

  • 1/2 head of green cabbage, very finely shredded or one bag of pre cut cabbage (I really like the “angel hair” chopped cabbage, if you can find it)
  • 4 to 5 green onions, chopped
  • 2 tablespoons toasted sesame seeds
  • 1 to 2 packages of cheap ramen noodles (doesn’t matter what flavor, the seasoning packed will discarded)
  • about 3/4 cup of Girard’s Chinese Chicken Salad dressing (The bottle is triangle-shaped. If you can’t find Girard’s, use your favorite Chinese Chicken Salad dressing)

Directions:

If your cabbage isn’t already chopped, chop it up with a sharp knife. Toss it gently in a big bowl. The finer the chop, the better.

Chop your green onions and add them to the cabbage.

Gently open the package of ramen noodles. Discard the seasoning packet and then break the noodles apart into small pieces. I find this is easiest to do when the noodles are still in the package. More than once I’ve had bits of noodles fly across my kitchen.

Now the tricky part of this salad is timing. You don’t want to add the noodles and dressing and then have to wait a while before people eat the salad, it’s best to toss all of the ingredients together moments before serving. Wait too long and the noodles won’t be crunchy anymore. Even the cabbage starts to loose its crunch after the salad has been sitting for a while.

Once you are ready to serve, toss the ingredients together and sprinkle the sesame seeds on top.

As is, this salad is vegan (my brother, who’s vegan, loves it!). Although, this can make for a filling and delicious lunch if you add diced, grilled chicken to it.
