Super Easy Super Bowl Recipes

Game time is set, the house is clean, you have invited the guests and then you realize you have nothing planned for your football fans to eat!

I have been in this situation more than one time and have found myself scrambling for something simple to whip up last minute.

After searching a million sites and trying a bunch of different recipes, as well as sharing other mama’s ideas and suggestions, I have found these plus others from my other Quick and Easy Football Food post that have become some of our household favorites.

The following easy go-to recipes inspired by three of our Mama Say What mamas are all quick and yummy ideas for entertaining while watching the big game for busy mamas short on time; they are sure to impress your guests!

Laura’s 10-Minute Pizza Dip

Ingredients:

1 8 oz. package of cream cheese
1 tsp. garlic powder
1 tsp. Italian seasoning
1 cup shredded mozzarella
1 14 oz. jar of pizza sauce

Directions:

Mix garlic and seasoning into the cream cheese and spread on bottom of microwave safe dish.

Pour sauce on top and spread evenly.

Spread the cheese on top. Microwave for about 5 minutes or until its melted and gooey. Serve with Tostitos.

 

Sam’s Easy Triscuit Pizzas

Ingredients:

Triscuit crackers
Pizza sauce
Pepperoni
Mozzarella cheese

Directions:

Spread your crackers out on a plate and put a little dab of pizza sauce on each cracker. We use the squeezable stuff, so just a small squirt. Place one pepperoni on each cracker. Top each with mozzarella cheese. Put in the microwave for about 30 seconds, or until cheese is melted.

 

Cheesy Chicken Enchilada Soup

Ingredients:

1 tablespoon vegetable oil
1/2 lb. boneless skinless chicken breast (cubed)
1 small yellow onion (chopped)
2 garlic cloves (minced)
2 cups chicken broth
1/2 cup masa harina or instant masa mix
2/3 cup enchilada sauce
6 oz. Velveeta cheese (cut into 2-inch cubes)
1 teaspoon salt
1.5 teaspoon chili Powder
1/2 teaspoon cumin
1 can black beans (rinsed and drained)
1 can whole kernel corn
1 lime

For added garnish: shredded cheddar cheese, crumbled corn tortilla chips, tomatoes, avocado and green onions.

Directions:

Add oil to a large pot over medium heat. Add chicken breasts, onions and garlic to pot and sauté over medium heat for about five minutes to brown the chicken. Add chicken broth.

Combine masa harina with one cup of water in a medium bowl and whisk until blended (the mixture will be thick). Add the masa mixture to the pot with chicken mixture. Add the remaining water, enchilada sauce, cheese and spices to pot and bring mixture to a boil.

I normally add the cheese 2 cubes at a time and mix the entire time. Reduce heat, add beans and corn and simmer soup for 30-40 minutes until thick.

Continue to stir often, as the soup will thicken quickly. Add lime juice to taste. Serve soup in cups or bowls, and garnish with shredded cheddar cheese, crumbled corn tortilla chips, tomatoes, avocado and green onions.
