Thanksgiving Lime Jello Parfait

Growing up, there was always one Thanksgiving dish that I looked forward to the most: my grandmother’s Lime Jello Parfait.

My mom made it every year, and I’ve continued the tradition with my own family. It’s technically a dessert, but in keeping with tradition, we serve it with dinner instead of afterwards.

The best part? This recipe is very forgiving if you have limited time, (or if you mommy-brain and happen to forget to chill the mixture before adding the whipped cream!) Either way it will set up and taste the same.

Ingredients:

  •  1-3 oz package lime Jello
  • 1 cup hot water
  • 1-8 oz package cream cheese
  • 1/4 cup sugar
  • 3 TBS orange juice
  • 3 TBS lime juice
  • 1 cup heavy cream

Directions:

Using an electric or stand mixer, cream together one 8-ounce package of cream cheese with 1/4 cup of sugar.

Dissolve one 3-ounce package of lime Jello in one cup hot water. Add in three tablespoons of orange juice and three tablespoons of lime juice to the Jello.

Pour the Jello in to the cream cheese and sugar mixture and gently blend to incorporate all the ingredients.

Pour in to a second container (you’ll need to use your mixer again) and chill until slightly thickened, about 2 hours.

Whip one cup of heavy cream and gently fold into the Jello.

Pour into parfait glasses and keep refrigerated until it’s time to eat!
